ASIAN INSPIRED PORK BALL NOODLE SOUP
This Asian-inspired pork ball noodle soup is a quick and easy recipe with flavours that pop! The peppery sausage meatballs are paired with ginger, garlic, lime zest, and a touch of Sriracha for a spicy kick. Fresh spinach adds vibrant colour and freshness to this comforting soup, making it a good meal option.

Ingredients-
- 3 peppery sausages 
- 1/2 red pepper 
- 1-2 garlic cloves, minced 
- 1-2 inch ginger, minced 
- Zest of 1 lime 
- 2 tsp soy sauce 
- 1/2 tsp cider or rice wine vinegar 
- 1 tsp Sriracha 
- Handful of fresh spinach 
- 600ml water 
- Sesame seeds (to finish) 
Instructions-
- Prep the Ingredients: - Remove the casings from the peppery sausages and form them into small meatballs. 
- Slice the red pepper. 
- Mince the garlic and ginger. 
- Zest the lime. 
 
- Cook the Meatballs: - In a pan, brown the sausage meatballs until they are cooked through. This will take about 5-7 minutes. Remove them from the pan and set them aside. 
 
- Sauté the Aromatics: - In the same pan, add the minced garlic and ginger. Sauté them for a minute or two until fragrant. 
 
- Create the Broth: - Add the water, soy sauce, cider or rice wine vinegar, Sriracha, and the sliced red pepper to the pan. 
- Simmer for a few minutes to combine the flavors. 
 
- Assemble the Soup: - Add the meatballs and lime zest to the pan. Simmer for a few more minutes. 
- Just before serving, stir in a handful of fresh spinach and allow it to wilt. 
 
- Finish and Serve: - To finish, sprinkle sesame seeds over the soup.
