CAJUN BUTTER COD
Tender cod fillets coated in a spicy Cajun and paprika butter. It's served with coconut rice and your choice of greens for a delicious and well-rounded meal.

Ingredients-
- 2 Cod fillets 
- 1 tbsp Butter 
- 1 tsp Cajun Spice 
- 1/2 tsp Paprika 
For the Coconut Rice:
- 1 tin coconut milk 
- 1 tin water 
- 1 tin rice 
- A little oil for toasting 
For the Greens:
- Tenderstem broccoli, asparagus, or green beans (choose your preference) 
- Fresh lime juice (for serving) 
Instructions-
- Preheat your oven to 175°C (350°F). 
- In a small bowl, mix the butter, Cajun spice, and paprika together to create the Cajun butter mixture. 
- Coat the cod fillets with the Cajun butter mixture, ensuring they are well coated on both sides. 
- Place the cod fillets on a baking tray or in an oven-safe dish. 
- Bake the cod fillets in the preheated oven for about 15-25 minutes, depending on the thickness of the cod. The fish should be flaky and cooked through when done. 
- While the cod is baking, prepare the coconut rice: - In a pan, add a little oil and the rice, heat it until it becomes slightly nutty. You can slightly toast the rice in the oil. 
- Turn the heat to medium and add one tin of coconut milk and one tin of cold water to the rice. 
- Simmer for exactly ten minutes with a lid on. After ten minutes, take the rice off the heat and let it sit aside for an additional 5 minutes to continue cooking. Keep the lid on the pan during this time. A non-stick pan is essential for this method. 
 
- While the rice is resting, prepare your choice of greens (Tenderstem broccoli, asparagus, or green beans) by steaming or boiling them until they are tender. 
- Serve hot with a side of coconut rice and your steamed greens. Drizzle fresh lime juice over the fish for an touch extra.
