CHIPOTLE HONEY SALMON
Chipotle Honey Salmon is a sweet and smoky dish with a hint of spice. This recipe features tender salmon fillets and asparagus, glazed with a honey and chipotle paste dressing, served alongside crushed new potatoes.

Ingredients-
- 3 tbsp honey 
- 1 garlic clove, grated 
- 1 tsp chipotle paste (adjust to taste) 
- 1 tsp dark soy sauce 
- 2x 100g asparagus tips 
- 2x 500g new potatoes 
- 240g salmon fillets (2) 
- Olive oil (for brushing) 
- Salt (for seasoning) 
Instructions-
- Preheat your oven to 200°C (390°F). 
- Boil the new potatoes in salted water for 15 minutes. Drain and set them aside. 
- Crush the boiled new potatoes with a flat-bottomed glass. 
- Place the crushed new potatoes on a baking tray, brush them with olive oil, and season with salt. Add the grated garlic clove on top. 
- Bake the crushed new potatoes in the preheated oven for 25 minutes, until they become golden and crispy. 
- While the potatoes are baking, prepare the dressing. In a small bowl, mix the honey, chipotle paste, and dark soy sauce. Adjust the amount of chipotle paste to your preferred level of spiciness. 
- After 25 minutes, remove the tray from the oven. 
- Add the salmon fillets and asparagus tips to the tray. 
- Drizzle the dressing over the salmon and asparagus. 
- Return the tray to the oven and bake for an additional 15 minutes, or until the salmon is cooked through and the asparagus is tender. 
- Serve your Chipotle Honey Salmon alongside the crispy crushed new potatoes.
