INDIAN INSPIRED BAKEAWAY
A flavourful and hearty Indian-inspired bake featuring spiced potatoes and pork koftas baked in a rich tomato and cauliflower sauce.

Ingredients & Method-
For the Potato Mix:
- 5/6 potatoes, peeled and chopped 
- 1 onion, finely diced 
- 1 tbsp olive oil 
- 1 tbsp cumin powder 
- 1 tbsp coriander powder 
- 1 tsp cumin seeds 
- 1 tbsp ginger, grated 
- 1 tbsp garlic, grated 
- 1/2 tsp turmeric 
- 1 tsp chilli flakes 
- 1 tsp garam masala 
Instructions-
- Combine all the ingredients in an oven tray. 
- Bake at 180°C for 30 minutes. 
For the Kofte-
- 500g Pork Mince (or Lamb, Beef, or Chicken mince) 
- 1 tsp Ginger 
- 1 tsp Garlic 
- 1/2 tbsp cumin powder 
- 1/2 tbsp coriander powder 
- 1/2 red onion, grated 
- 1/2 tsp salt 
Instructions-
- Mix all the Kofte ingredients in a bowl and set aside. 
- Remove the tray from the oven and add: - 400ml stock 
- 1 tin of chopped tomatoes 
- 1/2 cauliflower in florets 
- Handful of peas. 
 
- Divide the mince mixture into 6-8 Kofta’s and place in the tray, half submerged. 
- Bake for an additional 1 hour at 150°C, covered. Then, remove foil and bake for 10 more minutes to brown. 
- Add fresh lemon and coriander.
