PORK & LIME CHILLI NOODLES
Such a wonderful quick and easy weekday dish. It’s essential that you use a peppery Pork or Cumberland sausage and finish with the fresh lime juice in this recipe for maximum flavour.

Ingredients-
- 4 Pork/Cumberland sausages 
- 1 onion, finely sliced 
- 1 green pepper, finely sliced 
- 1 yellow pepper, finely sliced 
- 2 portions of ramen noodles or egg noodles 
- 1 lime 
- White sesame seeds 
- Chilli flakes (optional) 
Sauce:
- 2 tbsp soy sauce 
- 1/2 tsp dark soy sauce (optional) 
- 2 tbsp sweet chilli sauce 
Instructions-
- Begin by finely slicing the onion, green pepper, and yellow pepper. 
- Sauté the sliced vegetables in a little oil until softened. 
- In a separate pot, boil the ramen noodles or egg noodles until cooked. 
- Remove the sausage skins and break up the sausages with a masher, whisk, or spoon. 
- Add the broken-up sausages to the sautéed vegetables and cook until browned. 
- Prepare the sauce by combining soy sauce, dark soy sauce (if using), and sweet chilli sauce. Add the sauce to the pan. 
- Incorporate the cooked noodles into the pan, ensuring they absorb the sauce. 
- Finish the dish by sprinkling white sesame seeds and optional chilli flakes for an extra kick.
