ROSEMARY & BALSAMIC PORK LOIN
Perfectly cooked marinated pork loin steaks, served with roasted potato wedges, cherry tomatoes, and chunks of red onion.

Ingredients-
- 480g Pork Loin Steaks 
- 10 medium potatoes, cut into potato wedges 
- 1 red onion, cut into 1cm chunks 
- 330g punnet cherry tomatoes 
Sauce:
- 1 tbsp brown sugar 
- 1 tbsp chopped rosemary 
- 2 garlic cloves, grated 
- 1 tbsp balsamic vinegar 
- 1/2 tsp salt 
- 1 tbsp olive oil 
Instructions-
- Prepare the Sauce: - In a bowl, mix together brown sugar, chopped rosemary, grated garlic, balsamic vinegar, salt, and olive oil. Set aside. 
 
- Marinate the Pork: - Take half of the prepared sauce and spread it evenly over the pork loin steaks. Allow them to marinate while you continue with the recipe. 
 
- Prepare Potatoes: - Cut the medium-sized potatoes into potato wedges. 
- Boil the potato wedges in salted water until they are fork-tender. 
- Drain the potatoes and allow them to steam dry. 
 
- Roast the Potatoes: - Place the steamed dry potato wedges, cherry tomatoes, and chunks of red onion on a baking tray. 
- Drizzle the remaining sauce over the vegetables. 
- Roast the potatoes and vegetables in the oven at 180°C for 30 minutes. 
 
- Cook the Pork: - In a pan, cook the marinated pork loin steaks for 5-7 minutes on each side. The cooking time depends on the thickness of the steaks. 
 
- Serve: - Serve the rosemary and balsamic-marinated pork loin steaks with the roasted potatoes, cherry tomatoes, and red onion.
