STEAK & HALLOUMI SKEWERS
The tenderness of steak and the richness of halloumi with a side of aromatic and spiced Jollof Rice. The result is a delicious and well-rounded meal that's perfect for family dinners or special occasions. Please note this isn't a traditional jollof rice but more so a quicker version using more accessible ingredients.

Rice Ingredients-
- 1 tbsp olive oil 
- 1 onion, finely diced 
- 3 garlic cloves, finely diced 
- 3 tomatoes, roughly diced 
- 1 tbsp tomato purée 
- 400ml chicken stock 
- 250g basmati rice 
Spice Blend-
- 1 tsp cumin 
- 1 tsp coriander 
- 1/2 tsp cinnamon 
- 1/4 tsp nutmeg 
- 1/2 tsp black pepper 
- 1/2 tsp cardamom 
Skewers Ingredients-
- 2 steaks (fillet, sirloin, or rump) 
- 1 block halloumi 
- 1 pepper 
- 1 tsp African spice blend 
- 1 tsp olive oil 
How to-
Jollof Rice:
- Mix the spice blend together, leaving 1 teaspoon aside for the skewers, and add the rest to the rice. 
- In a large non-stick pan, heat the olive oil and sauté the finely diced onion and garlic until they become soft and translucent. 
- Add the roughly diced tomatoes and tomato purée to the pan. Mix well. 
- Add the basmati rice and chicken stock. Cover with a lid and bring to a boil. Cook for exactly ten minutes on medium heat. 
- After boiling, you can remove the pan from the heat and leave it aside for up to 30 minutes, allowing you time to prepare the skewers before serving. 
Skewers:
- Dice the steaks, halloumi, and peppers. Thread them onto soaked wooden skewers. 
- Brush the skewers with olive oil and sprinkle with the reserved 1 teaspoon of the African spice blend. 
- Grill the skewers for around 3-5 minutes, rotating them several times, until they are cooked to your desired level.
